My Chocolate cake
Namaste to all Indians and Hello to all my friends abroad. It is quite a problem for people with microwave ovens to bake the perfect cupcake. In this blog I shall disclose my top secret recipe of the same (even my mom doesn't know it...).
Ingredients
1. Unsalted butter (1/4 cup)
2. Granulated sugar (2 to 3 tbsp)
3. Brown sugar or molasses (2 to 3 tbsp)
4. Large eggs (3)
5. Full cream milk (3 tbsp)
6. Baking powder (1 tsp)
7. Vanilla essence (1 tbsp)
8. All-purpose flour (1 cup)
9. Coffee powder (1 tsp)
10. Cocoa powder (1/2 cup)
Method
1. Melt the butter at full MW power for 10 to 20 seconds in a large microwave safe bowl.
2. Put in the sugars. Whisk till incorporated.
3. Add the vanilla essence and crack in 2 eggs. Mix till light.
4. In another bowl sieve in the dry ingredients i.e. the flour, baking powder and the coffee powder. Mix lightly.
5. Slowly drop the dry mix into the light wet mix and whisk hard (use a beater).
6. Crack in the last egg and add the milk spoon-by-spoon until a light, smooth and silky consistency is reached where the batter falls off as ribbons.
7. Transfer the batter into ramekins or cups lined with silicon or parchment.
8. Cook at 50% micro-power for 1 minute.
Optional: Serve when cool with a drizzle of chocolate sauce on top.
So fellas, that's it, a 14 year old's representation of a mini chocolate cake.
