My Invention: The Island

Hi pals! What's up!
What is more surprising than the invention of a new recipe by me. I figure many of you have been to islands, why not recreate one? Impressed? Here's how you do that on the platter...

Ingredients

1. Heavy cream /condensed milk (100ml)
2. Custard powder (3 tbsp)
3. Milk - full cream (1 L)
4. Icing /castor sugar (to taste)
5. Dark chocolate (1 bar)
6. White chocolate (1 bar)
For garnishing
7. Cocoa powder
8. Honey
9. Chocolate sauce
10. Mint sprigs

Method

1. Bring the milk to a boil and add sugar to taste. Reduce it till it's almost half it's original volume. Add custard powder and whisk hard, to prevent lumping. Turn off the heat. Set aside in a piping bag.

2. Take the two chocolates separately and melt them. To the dark chocolate, fold in the heavy cream /condensed milk. This becomes your ganache. Set aside the ganache in a piping bag to chill.

3. Take the white chocolate and cool it till its scoopable. Quenelle it and put it in the chiller.

Plating

Take a plate and pipe the custard in it's centre like a circle. Within this circle , carefully pipe the ganache. Take the white chocolate quenelle and cut it using a warm knife in two unequal halves. Place the halves on the two layers and dust cocoa powder over the "island". Place mint leaves around the two "mountains" to resemble trees. Pour some honey around the base to resemble water. Serve cold with some chocolate sauce.

There you go. Your "island" is ready to be eaten, mountains and all. Enjoy...
